Ingredients
For the humous:
- 1 can chickpeas, drained (drain the chickpeas into a bowl and keep the juice, known as aquafaba)
- 1 tbsp yoghurt
- 1 tbsp olive oil
- 1 large raw beetroot, grated
- Pinch of cumin, salt and pepper
- Squeeze of lemon juice
- 1 clove garlic
- 1 tbsp tahini
- Dash of water (if necessary)
Method
- Using a mixer or blender, blend the ingredients together until well combined
- Add a dash of water if necessary to create a smooth consistency
Ingredients
For the zero-waste vegan chocolate mousse:
- Chickpea juice from 1 can (aquafaba)
- 100g of ethically sourced 70% cocoa dark chocolate
- 2 tsp icing sugar
- Pinch of salt
Method
- Place a glass bowl over a pan of simmering water, making sure the bowl doesn’t touch the water
- Pop the chocolate into the glass bowl
- Once melted take off the heat
- In another large bowl, whisk the aquafaba and icing sugar together until stiff peaks are formed. You may want to use an electric whisk for this to speed the process up.
- Carefully fold the chocolate into the aquafaba and icing sugar mix
- Pour the mix into ramekins or Tupperware and refrigerate until set
