Ingredients

For the houmous: 

  • 1 can chickpeas, drained (drain the chickpeas into a bowl and keep the juice, known as aquafaba)
  • 1 tbsp yoghurt
  • 1 tbsp olive oil
  • 1 large raw beetroot, grated
  • Pinch of cumin, salt and pepper
  • Squeeze of lemon juice
  • 1 clove garlic
  • 1 tbsp tahini
  • Dash of water (if necessary)

 

Method

  1. Using a mixer or blender, blend the ingredients together until well combined
  2. Add a dash of water if necessary to create a smooth consistency

 

Ingredients

For the zero-waste vegan chocolate mousse:

  • Chickpea juice from 1 can (aquafaba) 
  • 100g of ethically sourced 70% cocoa dark chocolate
  • 2 tsp icing sugar
  • Pinch of salt

 

Method 

  1. Place a glass bowl over a pan of simmering water, making sure the bowl doesn’t touch the water
  2. Pop the chocolate into the glass bowl
  3. Once melted take off the heat
  4. In another large bowl, whisk the aquafaba and icing sugar together until stiff peaks are formed. You may want to use an electric whisk for this to speed the process up.
  5. Carefully fold the chocolate into the aquafaba and icing sugar mix
  6. Pour the mix into ramekins or Tupperware and refrigerate until set
