4 x Gosh! Butternut, Tomato & Basil Sausages, cut at a diagonal (or any of the Gosh! sausage range)
2 tbsp vegetarian red pesto
1 tsp olive oil
6 cherry tomatoes, quartered
180g dried pasta such as fusilli or penne, cooked according to instructions (gluten free if required)
125g mozzarella, cut in slices (dairy free if required)
A handful of washed rocket leaves
¼ tsp freshly ground black pepper
