1 tbsp olive oil for frying
6 Gosh! sausages
1 white onion finely sliced
2 garlic cloves, crushed
4 fresh thyme sprigs
1 tin of chopped tomatoes
1 tin of chickpeas, drained and rinsed
200g of baby spinach
1 red bell pepper – roughly chopped
Squeeze lemon juice + zest of ½ lemon
Chopped fresh parsley
- Heat the oil in a large frying pan and fry the onions for about 8 minutes, stirring often, until soft and light brown. Add the garlic and thyme, turn the heat down and cook for 2-3 minutes.
- Add the chopped tomatoes, chopped pepper and chickpeas to the pan. Stir well, then bring everything to a gentle simmer. Cook for 15 minutes until the sauce has reduced slightly and thickened.
- Add the sausages to the pan and cook for another 10 minutes. Just before, add the baby spinach and the chopped parsley.
- Season well with salt and pepper, then divide among bowls. Serve drizzled with a little olive oil and a squeeze of lemon juice and lemon zest. Sprinkle with extra parsley if you like.
