Ingredients
4 Gosh! Sweetcorn & Quinoa Bites
1 pack of tortilla wraps
1 tin of chopped tomatoes
100g baby spinach leaves
1 small red onion, diced
2 garlic cloves, finely chopped
1 tbsp oregano
1/2 tsp salt
1/2 tsp black pepper
250g buffalo mozzarella, grated
4-5 basil leaves, roughly chopped
2 tbsp olive oil
Method
- In a pan, heat the olive oil on a medium heat
- To make the pizza sauce, add the garlic and red onion and sauté for 1-2 minutes
- Add the tin of chopped tomatoes and season with salt and pepper to taste
- Add the oregano and chopped basil and stir well
- Spread the pizza sauce over the tortilla wraps
- Load up with as much grated mozzarella as you would like
- Cut the Gosh! Sweetcorn & Quinoa Bites into halves and dot around on the pizza wraps
- Grill in the oven until the cheese melts and the Gosh! Bites are warmed through
- Garnish with spinach leaves and serve hot
