This mouth-watering spin on a pasta bolognese packs a superfood punch. Try Messylittlevegan’s recipe for avocado and beetroot pasta with Gosh! Sweetcorn & Quinoa Bites – a flavourful dish that everyone can tuck in to.

Ingredients:

  • Pasta/ gluten free pasta
  • Gosh! Sweetcorn & Quinoa Bites
  • Rocket
  • Nutritional yeast

For the sauce:

  • 1 large avocado
  • ½ cooked beetroot
  • 1 garlic clove
  • 1 spring onion, roughly chopped
  • ¼ tbsp tahini (or coconut cream)
  • 1 tbsp coconut sugar
  • ½ lemon juiced
  • 2 tbsp tomato puree
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper
  1. Preheat oven to Electric 200°/ Fan oven 180°/ Gas Mark 4
  2. Bring a pan of water to the boil and simmer pasta until softened
  3. Place Gosh! Sweetcorn & Quinoa Bites on a baking tray and cook in the centre of the oven for 8-10 minutes
  4. Add sauce ingredients to a food processor and blend
  5. Heat sauce
  6. Drain pasta and combine with sauce
  7. Add Gosh! Sweetcorn &amp; Quinoa Bites and garnish with rocket and nutritional yeast
