For the salad:

  • 1x cucumber, peeled (make sure to keep the peel to one side)
  • 1x Iceberg lettuce
  • 3x carrots
  • Handful of edamame beans
  • Handful of seeds
  • Gosh! Beetroot Falafel

For the Tzatziki:

  • Peel of the cucumber used in the salad bowl
  • Handful of mint leaves, finely chopped
  • ½ pot of yoghurt
  • 1 tbsp of lemon juice
  • Pinch of salt 


  1. For the salad, arrange all the ingredients into a bowl or Tupperware if you’re taking it on a picnic!
  2. For the tzatziki, use the leftover peel from the cucumber and mix with the rest of the ingredients
  3. The tzatziki is perfect for dipping your favourite snacks into but also doubles up as a dressing for the salad
